Ingredients

  • Fresh corn kernels - 2 cups
  • Coconut milk - 1 cup
  • Vegetable broth - 1 cup
  • Red bell pepper - 1/2, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chives - 2 tablespoons, chopped for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the fresh corn kernels, vegetable broth, coconut milk, thyme, salt, and black pepper. Bring to a simmer.
  4. Reduce heat to low and let the chowder cook for 15-20 minutes, stirring occasionally, until the corn is tender and the flavors meld together.
  5. Using an immersion blender, blend the chowder until smooth, leaving some corn pieces for texture. Alternatively, carefully transfer half of the chowder to a blender, blend until smooth, and return to the pot.
  6. Serve hot, garnished with chopped chives.
