Ingredients

  • Zucchini - 250 grams
  • Long-grain rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the zucchini and cook for about 5 minutes until it begins to soften.
  5. Add the rinsed rice to the saucepan and stir well to combine with the vegetables.
  6. Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and stir in the fresh dill, parsley, and lemon juice. Fluff with a fork and adjust seasoning if needed.
  9. Serve warm, garnished with additional herbs if desired.
