Ingredients
- Zucchini - 250 grams
- Long-grain rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the zucchini and cook for about 5 minutes until it begins to soften.
- Add the rinsed rice to the saucepan and stir well to combine with the vegetables.
- Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and stir in the fresh dill, parsley, and lemon juice. Fluff with a fork and adjust seasoning if needed.
- Serve warm, garnished with additional herbs if desired.
