- Cherry tomatoes - 150 grams, halved
- Fresh oregano - 1 tablespoon, chopped (or 1 teaspoon dried)
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Using a spiralizer or a vegetable peeler, create zucchini noodles from the two zucchini and set them aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
- Stir in the zucchini noodles, fresh oregano, red pepper flakes, salt, and black pepper. Cook for an additional 5-7 minutes, tossing occasionally, until the zucchini noodles are tender but still al dente.
- Remove the skillet from the heat and gently stir in the crumbled feta cheese and lemon juice. Allow the residual heat to warm the cheese slightly.
