Ingredients

  • Zucchini - 2 medium-sized
  • Feta cheese - 100 grams, crumbled

  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh oregano - 1 tablespoon, chopped (or 1 teaspoon dried)
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles from the two zucchini and set them aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
  4. Stir in the zucchini noodles, fresh oregano, red pepper flakes, salt, and black pepper. Cook for an additional 5-7 minutes, tossing occasionally, until the zucchini noodles are tender but still al dente.
