Ingredients

  • Zucchini - 2 medium
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Kalamata olives - 60 grams, pitted and sliced
  • Sun-dried tomatoes - 30 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Using a spiralizer, create noodles from the zucchini and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they soften.
  4. Stir in the spiralized zucchini, sun-dried tomatoes, lemon juice, and dried oregano, cooking for another 3-5 minutes until the zucchini is just tender.
  5. Season with salt and black pepper to taste, then remove from heat.
  6. Fold in the sliced olives and chopped basil, mixing well.
  7. Serve immediately, garnished with additional basil if desired.
