Ingredients

  • Whole wheat pizza dough - 200 grams
  • Zucchini - 1 medium (about 200 grams), sliced thinly
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh mint leaves - 1/4 cup, chopped
  • Cherry tomatoes - 100 grams, halved
  • Dairy-free mozzarella cheese - 100 grams, shredded
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness (about 1/4-inch thick).
  3. Transfer the rolled out dough to a baking sheet or pizza stone.
  4. In a mixing bowl, combine the sliced zucchini, minced garlic, olive oil, salt, black pepper, and dried oregano. Toss until well coated.
  5. Spread the zucchini mixture evenly over the pizza dough.
  6. Scatter the halved cherry tomatoes on top of the zucchini.
  7. Sprinkle the dairy-free mozzarella cheese over the entire pizza.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
  9. Remove from the oven and sprinkle with fresh chopped mint before slicing and serving.
