Ingredients

  • zucchini - 250 grams
  • feta cheese - 100 grams, crumbled
  • almond flour - 50 grams
  • egg - 1 large
  • fresh dill - 2 tablespoons, chopped
  • garlic - 1 clove, minced
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • olive oil - 2 tablespoons (for frying)
  • Greek yogurt - 150 grams
  • lemon juice - 1 tablespoon
  • paprika - 1/2 teaspoon

Steps

  1. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  2. In a mixing bowl, combine the drained zucchini, crumbled feta cheese, almond flour, egg, chopped dill, minced garlic, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture and form a patty. Place it in the skillet and flatten it slightly with a spatula. Repeat with the remaining mixture, cooking 3-4 fritters at a time.
  5. Cook the fritters for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed between batches.
  6. While the fritters are cooking, prepare the yogurt dip by mixing Greek yogurt with lemon juice and paprika in a small bowl. Stir well until smooth.
  7. Once the fritters are cooked, transfer them to a paper towel-lined plate to drain any excess oil.
  8. Serve the zucchini fritters warm with the yogurt dip on the side.
