Ingredients
- Zucchini - 200 grams
- All-purpose flour - 50 grams
- Chickpea flour - 30 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 100 ml
- Olive oil - 2 tablespoons (for frying)
- Pizza base (store-bought or homemade) - 1 medium
- Tomato sauce - 100 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, thinly sliced
- Kalamata olives - 50 grams, pitted and sliced
- Fresh basil - a handful, for garnish
Steps
- Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, all-purpose flour, chickpea flour, nutritional yeast, garlic powder, dried oregano, salt, and black pepper.
- Gradually add water to the mixture and stir until a thick batter forms. Let it rest for 10 minutes.
- While the batter rests, preheat a frying pan over medium heat and add 1 tablespoon of olive oil.
- Scoop about 2 tablespoons of the zucchini batter into the pan, flattening it slightly to form fritters. Cook for 3-4 minutes on each side until golden brown and crispy. Repeat with the remaining batter, adding more oil as needed.
- Preheat the oven to 220°C (428°F). Place the pizza base on a baking sheet.
- Spread the tomato sauce evenly over the pizza base. Top with the cooked zucchini fritters, halved cherry tomatoes, sliced red onion, and sliced Kalamata olives.
- Bake in the preheated oven for 10-12 minutes, until the crust is crispy and the toppings are heated through.
- Remove from the oven, garnish with fresh basil, slice, and serve hot.
