- Zucchini - 300 grams
- Almond flour - 50 grams
- Feta cheese - 100 grams, crumbled
- Eggs - 2 large
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons (for frying)
- Greek yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon (for sauce)
- Cucumber - 50 grams, grated (for sauce)

Steps
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture until dry.
- In a mixing bowl, combine the grated zucchini, almond flour, crumbled feta cheese, eggs, minced garlic, chopped dill, chopped parsley, salt, and black pepper. Mix until well combined.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula. Cook for about 3-4 minutes per side, or until golden brown and crispy. Repeat with remaining mixture, adding more oil as needed.
- While the fritters are cooking, prepare the sauce by mixing Greek yogurt, lemon juice, grated cucumber, and a pinch of salt in a small bowl.
- Once the fritters are cooked, serve them warm topped with a dollop of the yogurt sauce.
