Ingredients

  • Zucchini - 300 grams
  • Almond flour - 50 grams
  • Feta cheese - 100 grams, crumbled
  • Eggs - 2 large
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons (for frying)
  • Greek yogurt - 100 grams (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Cucumber - 50 grams, grated (for sauce)
  • Salt - a pinch (for sauce)

Steps

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture until dry.
  2. In a mixing bowl, combine the grated zucchini, almond flour, crumbled feta cheese, eggs, minced garlic, chopped dill, chopped parsley, salt, and black pepper. Mix until well combined.
  3. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula. Cook for about 3-4 minutes per side, or until golden brown and crispy. Repeat with remaining mixture, adding more oil as needed.
  5. While the fritters are cooking, prepare the sauce by mixing Greek yogurt, lemon juice, grated cucumber, and a pinch of salt in a small bowl.
  6. Once the fritters are cooked, serve them warm topped with a dollop of the yogurt sauce.
