Ingredients

  • Zucchini - 300 grams, grated
  • Feta cheese - 100 grams, crumbled
  • Whole-wheat flour - 50 grams
  • Egg - 1 large
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons, for frying
  • Whole-wheat burger buns - 2
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cucumber - 50 grams, finely diced

Steps

  1. In a colander, sprinkle the grated zucchini with salt and let it sit for 10-15 minutes to draw out excess moisture.
  2. After the zucchini has drained, squeeze it in a clean kitchen towel to remove any remaining liquid.
  3. In a large mixing bowl, combine the drained zucchini, crumbled feta cheese, whole-wheat flour, egg, chopped dill, chopped parsley, minced garlic, black pepper, and mix well until combined.
  4. Form the mixture into two patties, about 1.5 inches thick.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and cooked through.
  6. While the patties are cooking, make the yogurt sauce by mixing Greek yogurt, lemon juice, and diced cucumber in a small bowl. Season with salt to taste.
