Ingredients
- Zucchini - 300 grams, grated
- Feta cheese - 100 grams, crumbled
- Whole-wheat flour - 50 grams
- Egg - 1 large
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons, for frying
- Whole-wheat burger buns - 2
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Cucumber - 50 grams, finely diced
Steps
- In a colander, sprinkle the grated zucchini with salt and let it sit for 10-15 minutes to draw out excess moisture.
- After the zucchini has drained, squeeze it in a clean kitchen towel to remove any remaining liquid.
- In a large mixing bowl, combine the drained zucchini, crumbled feta cheese, whole-wheat flour, egg, chopped dill, chopped parsley, minced garlic, black pepper, and mix well until combined.
- Form the mixture into two patties, about 1.5 inches thick.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and cooked through.
- While the patties are cooking, make the yogurt sauce by mixing Greek yogurt, lemon juice, and diced cucumber in a small bowl. Season with salt to taste.
- Toast the whole-wheat buns lightly on a skillet or in a toaster.
- Assemble the burger by placing a zucchini fritter on each bun, topping it with the yogurt sauce, and closing with the bun top.
- Serve immediately with a side salad or your favorite healthy side.
