Ingredients

  • Zucchini - 200 grams, grated
  • Chickpea flour - 50 grams
  • Feta cheese (dairy-free) - 50 grams, crumbled
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Whole grain burger buns - 2
  • Tomato - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2

Steps

  1. Grate the zucchini and place it in a colander. Sprinkle with a little salt and let it sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the zucchini in a clean towel to remove as much water as possible.
  3. In a mixing bowl, combine the grated zucchini, chickpea flour, crumbled dairy-free feta, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix until well combined.
  4. Form the mixture into 2 burger patties.
  5. Heat the olive oil in a frying pan over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and cooked through.
  6. While the patties are cooking, toast the whole grain burger buns lightly.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a zucchini feta patty, sliced tomato, red onion, and cucumber. Top with the other half of the bun.
