- Zucchini - 300 grams
- Chickpea flour - 50 grams
- Feta cheese - 50 grams, crumbled
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Whole wheat pita bread - 2 pieces
- Tzatziki sauce - 100 grams (for serving)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, chickpea flour, crumbled feta cheese, minced garlic, chopped dill, chopped mint, egg, salt, and black pepper. Mix until well combined.
- Form the mixture into 2 burger patties.
- Heat olive oil in a skillet over medium heat. Once hot, add the zucchini patties and cook for about 4-5 minutes on each side or until golden brown.
- While the patties are cooking, warm the whole wheat pita bread in a separate pan or microwave.
- Once cooked, place each zucchini patty in a pita bread and top with tzatziki sauce. Serve immediately.
