Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Whole wheat pita bread - 2 pieces
  • Tzatziki sauce - 100 grams (for serving)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, chickpea flour, crumbled feta cheese, minced garlic, chopped dill, chopped mint, egg, salt, and black pepper. Mix until well combined.
  3. Form the mixture into 2 burger patties.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the zucchini patties and cook for about 4-5 minutes on each side or until golden brown.
  5. While the patties are cooking, warm the whole wheat pita bread in a separate pan or microwave.
  6. Once cooked, place each zucchini patty in a pita bread and top with tzatziki sauce. Serve immediately.
