Ingredients

  • Zucchini - 300 grams
  • Chickpea flour - 60 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Grate the zucchini using a box grater and place in a clean kitchen towel. Squeeze out excess moisture from the grated zucchini.
  2. In a large mixing bowl, combine the grated zucchini, chickpea flour, chopped parsley, chopped mint, minced garlic, chopped onion, olive oil, lemon juice, salt, black pepper, paprika, and cumin.
  3. Mix well until all ingredients are combined and form a sticky mixture.
  4. Preheat the grill or BBQ to medium heat.
  5. With wet hands, shape the mixture into small balls, about 2.5 cm in diameter.
  6. Place the zucchini balls on a lightly greased grill pan or directly on the grill. Cook for 10-12 minutes, turning occasionally, until golden brown and crispy on all sides.
  7. Remove from the grill and let cool slightly before serving. Enjoy warm with a squeeze of fresh lemon juice.
