- Zucchini - 300 grams
- Chickpea flour - 60 grams
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
Steps
- Grate the zucchini using a box grater and place in a clean kitchen towel. Squeeze out excess moisture from the grated zucchini.
- In a large mixing bowl, combine the grated zucchini, chickpea flour, chopped parsley, chopped mint, minced garlic, chopped onion, olive oil, lemon juice, salt, black pepper, paprika, and cumin.
- Mix well until all ingredients are combined and form a sticky mixture.
- Preheat the grill or BBQ to medium heat.
- With wet hands, shape the mixture into small balls, about 2.5 cm in diameter.
- Place the zucchini balls on a lightly greased grill pan or directly on the grill. Cook for 10-12 minutes, turning occasionally, until golden brown and crispy on all sides.
- Remove from the grill and let cool slightly before serving. Enjoy warm with a squeeze of fresh lemon juice.
