Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Shrimp (peeled and deveined) - 250g
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 150g
  • Feta cheese (crumbled) - 50g
  • Oregano (dried) - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Wash and slice the zucchinis into thin half-moons.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender.
  5. Add the shrimp to the skillet and cook for another 3-4 minutes until they turn pink.
  6. Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper, cooking for an additional 2-3 minutes.
  7. Remove the skillet from heat and drizzle with lemon juice.
  8. Serve warm, topped with crumbled feta cheese and garnished with fresh parsley.
