Ingredients

  • Zucchini - 200 grams, thinly sliced
  • Feta cheese - 100 grams, crumbled
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh oregano - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, egg, 1 tablespoon of olive oil, salt, and pepper to form a dough.
  3. Press the dough into a greased tart pan evenly to form the crust.
  4. In a skillet, heat the remaining olive oil over medium heat, add minced garlic, and sauté for 1 minute until fragrant.
  5. Add the sliced zucchini to the skillet and cook for about 5-7 minutes until slightly softened.
  6. Spread the cooked zucchini mixture evenly over the crust in the tart pan.
  7. Sprinkle crumbled feta cheese and fresh oregano over the top.
  8. Bake in the preheated oven for 25-30 minutes until the edges are golden and the cheese is slightly melted.
  9. Remove from the oven, allow to cool slightly, slice, and serve warm.
