- Olive oil - 2 tablespoons (30ml)
- Red wine vinegar - 1 tablespoon (15ml)
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (optional)
Steps
- Wash and trim the zucchini, then use a spiralizer or a vegetable peeler to create zucchini noodles or ribbons.
- In a large mixing bowl, combine the zucchini, halved cherry tomatoes, diced cucumber, and sliced red onion.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
