Ingredients

  • Zucchini - 2 medium-sized (about 300g)
  • Feta cheese - 100g, crumbled
  • Cherry tomatoes - 150g, halved
  • Cucumber - 1 medium-sized (about 200g), diced
  • Red onion - 1/4, thinly sliced
  • Olive oil - 2 tablespoons (30ml)
  • Red wine vinegar - 1 tablespoon (15ml)
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (optional)

Steps

  1. Wash and trim the zucchini, then use a spiralizer or a vegetable peeler to create zucchini noodles or ribbons.
  2. In a large mixing bowl, combine the zucchini, halved cherry tomatoes, diced cucumber, and sliced red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
  5. Add the crumbled feta cheese and toss lightly to distribute without breaking up the feta too much.
  6. Garnish with chopped fresh parsley if using, and serve immediately.
