Ingredients

  • Zucchini - 2 medium, spiralized

  • Pine nuts - 30 grams
  • Garlic - 1 clove
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 60 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved (optional for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles and set aside.
  2. In a food processor, combine fresh basil, pine nuts, garlic, Parmesan cheese, olive oil, lemon juice, salt, and black pepper. Blend until smooth to create the pesto.
  3. In a large skillet over medium heat, add the zoodles and sauté for 2-3 minutes until slightly tender but still crisp.
