Ingredients
- Zucchini - 2 medium (about 400g)
- Ground beef (grass-fed) - 250g
- Almond flour - 30g
- Egg - 1 large
- Garlic - 2 cloves, minced
- Dried oregano - 1 tsp
- Dried thyme - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 2 tbsp
- Crushed tomatoes - 200g
- Fresh basil - a handful, chopped
Steps
- Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
- In a mixing bowl, combine ground beef, almond flour, egg, minced garlic, oregano, thyme, salt, and black pepper. Mix until well combined.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally, until browned on all sides.
- Once the meatballs are browned, add crushed tomatoes to the skillet. Reduce heat and simmer for about 10 minutes until the meatballs are cooked through.
- In another pan, lightly sauté the zoodles in a drizzle of olive oil for 2-3 minutes until just tender.
- Serve the meatballs over zoodles, garnished with fresh basil.
