Ingredients

  • Zucchini - 2 medium (about 400g)
  • Ground beef (grass-fed) - 250g
  • Almond flour - 30g
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 tsp
  • Dried thyme - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 2 tbsp
  • Crushed tomatoes - 200g
  • Fresh basil - a handful, chopped

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
  2. In a mixing bowl, combine ground beef, almond flour, egg, minced garlic, oregano, thyme, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 2.5 cm in diameter.
  4. Heat olive oil in a skillet over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally, until browned on all sides.
  5. Once the meatballs are browned, add crushed tomatoes to the skillet. Reduce heat and simmer for about 10 minutes until the meatballs are cooked through.
  6. In another pan, lightly sauté the zoodles in a drizzle of olive oil for 2-3 minutes until just tender.
  7. Serve the meatballs over zoodles, garnished with fresh basil.
