Ingredients

  • Flatbread - 2 pieces (200g total)
  • Olive oil - 2 tablespoons
  • Zaatar spice mix - 2 tablespoons
  • Cherry tomatoes - 150g, halved
  • Red onion - 50g, thinly sliced
  • Bell pepper - 100g, thinly sliced
  • Kalamata olives - 50g, pitted and halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a small bowl, mix the zaatar spice with olive oil to create a paste.
  3. Brush the zaatar mixture evenly over the flatbreads.
  4. Arrange the cherry tomatoes, red onion, bell pepper, and Kalamata olives on top of the flatbreads.
  5. Drizzle a little more olive oil over the toppings and sprinkle with salt to taste.
  6. Bake the flatbreads in the preheated oven for 10-12 minutes, or until the edges are crispy.
  7. Remove from the oven and let cool for a couple of minutes.
  8. Drizzle with lemon juice and sprinkle chopped parsley before slicing and serving.
