Ingredients

  • Greek yogurt - 200 grams
  • Cream cheese - 100 grams, softened

  • Lemon juice - 1 tablespoon
  • Graham cracker crumbs - 50 grams
  • Butter - 30 grams, melted
  • Gelatin powder - 1 teaspoon
  • Water - 2 tablespoons (for gelatin)

Steps

  1. In a small bowl, combine the graham cracker crumbs and melted butter, mixing until well combined. Press this mixture into the bottom of two small serving cups to form the crust.
  2. In another bowl, dissolve the gelatin powder in 2 tablespoons of warm water and let it sit for 5 minutes.
  3. In a mixing bowl, combine the softened cream cheese, Greek yogurt, honey, vanilla extract, and lemon juice. Mix until smooth and creamy.
  4. Gently heat the gelatin mixture until it becomes liquid and then stir it into the yogurt mixture until fully incorporated.
  5. Divide the cheesecake mixture evenly over the prepared crusts in the serving cups.
