- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Potato - 1 medium, peeled and diced
- Carrot - 1 medium, chopped
- Celery - 1 stalk, chopped
- Vegetable broth - 500 ml
- Mixed wild greens (e.g., dandelion, nettles, spinach) - 150 grams, washed and roughly chopped
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced potato, chopped carrot, and chopped celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Lower the heat and let it simmer for about 10 minutes, or until the vegetables are tender.
- Stir in the mixed wild greens, chopped dill, and parsley. Simmer for another 5 minutes until the greens are wilted and tender.
- Season the soup with salt, black pepper, and lemon juice to taste. Remove from heat and let it cool slightly.
- Blend the soup using an immersion blender until smooth, or transfer to a blender in batches, then return to the pot to warm through before serving.
