Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Potato - 1 medium, peeled and diced
  • Carrot - 1 medium, chopped
  • Celery - 1 stalk, chopped
  • Vegetable broth - 500 ml
  • Mixed wild greens (e.g., dandelion, nettles, spinach) - 150 grams, washed and roughly chopped
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced potato, chopped carrot, and chopped celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Lower the heat and let it simmer for about 10 minutes, or until the vegetables are tender.
  4. Stir in the mixed wild greens, chopped dill, and parsley. Simmer for another 5 minutes until the greens are wilted and tender.
  5. Season the soup with salt, black pepper, and lemon juice to taste. Remove from heat and let it cool slightly.
  6. Blend the soup using an immersion blender until smooth, or transfer to a blender in batches, then return to the pot to warm through before serving.
