- Brown rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Wild greens (such as dandelion, purslane, or spinach) - 200 grams, chopped
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Vegetable broth - 400 milliliters
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring for 2-3 minutes to toast the grains slightly.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat a separate pan over medium heat and add the chopped wild greens. Sauté for 3-5 minutes until wilted, then stir in the fresh dill and parsley.
- Once the rice is cooked, fluff it with a fork and gently fold in the sautéed wild greens, lemon juice, salt, and pepper to taste.
- Serve warm, garnished with additional herbs if desired.
