Ingredients

  • Brown rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Wild greens (such as dandelion, purslane, or spinach) - 200 grams, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 400 milliliters
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Drain the soaked rice and add it to the pot, stirring for 2-3 minutes to toast the grains slightly.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, heat a separate pan over medium heat and add the chopped wild greens. Sauté for 3-5 minutes until wilted, then stir in the fresh dill and parsley.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the sautéed wild greens, lemon juice, salt, and pepper to taste.
  8. Serve warm, garnished with additional herbs if desired.
