Ingredients
- All-purpose flour - 200 grams
- Olive oil - 60 ml
- Water - 60 ml
- Sea salt - 1 teaspoon
- Mixed wild greens (spinach, dandelion, and purslane) - 150 grams
- Green onions - 2, chopped
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and sea salt. Add the olive oil and mix until crumbly.
- Gradually add water and knead the dough until smooth. Cover and let it rest for 15 minutes.
- While the dough rests, rinse the wild greens thoroughly and chop them coarsely. In a pan, sauté the green onions in a little olive oil until soft.
- Add the chopped greens to the pan and cook until wilted. Stir in the dill, parsley, lemon juice, and black pepper. Remove from heat and let cool.
- Preheat the BBQ grill to medium heat. Roll out the dough on a floured surface into a circle about 30 cm in diameter.
- Place the cooled greens mixture in the center of the dough circle, leaving a border. Fold the edges over the filling to create a pie shape.
- Transfer the pie to a piece of parchment paper and carefully place it on the grill. Cover and cook for about 20-25 minutes until the crust is golden brown.
- Remove from the grill, let it cool for a few minutes, then slice and serve.
