Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 60 ml
  • Water - 60 ml
  • Sea salt - 1 teaspoon
  • Mixed wild greens (spinach, dandelion, and purslane) - 150 grams
  • Green onions - 2, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and sea salt. Add the olive oil and mix until crumbly.
  2. Gradually add water and knead the dough until smooth. Cover and let it rest for 15 minutes.
  3. While the dough rests, rinse the wild greens thoroughly and chop them coarsely. In a pan, sauté the green onions in a little olive oil until soft.
  4. Add the chopped greens to the pan and cook until wilted. Stir in the dill, parsley, lemon juice, and black pepper. Remove from heat and let cool.
  5. Preheat the BBQ grill to medium heat. Roll out the dough on a floured surface into a circle about 30 cm in diameter.
  6. Place the cooled greens mixture in the center of the dough circle, leaving a border. Fold the edges over the filling to create a pie shape.
  7. Transfer the pie to a piece of parchment paper and carefully place it on the grill. Cover and cook for about 20-25 minutes until the crust is golden brown.
  8. Remove from the grill, let it cool for a few minutes, then slice and serve.
