  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Tzatziki sauce - 100 grams (store-bought or homemade)

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
  2. Add the bell pepper, zucchini, red onion, and cherry tomatoes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated vegetables onto skewers, alternating between different vegetables.
