  • Red wine - 100 ml
  • Vegetable broth - 200 ml
  • Bay leaves - 2
  • Cinnamon stick - 1
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced carrot, bell pepper, and zucchini; cook for another 5 minutes.
  4. Add the sliced mushrooms and minced garlic; cook for an additional 3 minutes until the mushrooms soften.
  5. Stir in the tomato paste and cook for 1 minute to enhance the flavor.
  6. Add the canned diced tomatoes, red wine, and vegetable broth to the pot.
  7. Add the bay leaves, cinnamon stick, allspice, salt, and black pepper; stir to combine.
  8. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
  9. Let it cook for about 25-30 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
  10. Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley.
