Steps
- Heat the olive oil in a large pot over medium heat.
- Add the sliced onion and sauté until translucent, about 5 minutes.
- Stir in the diced carrot, bell pepper, and zucchini; cook for another 5 minutes.
- Add the sliced mushrooms and minced garlic; cook for an additional 3 minutes until the mushrooms soften.
- Stir in the tomato paste and cook for 1 minute to enhance the flavor.
- Add the canned diced tomatoes, red wine, and vegetable broth to the pot.
- Add the bay leaves, cinnamon stick, allspice, salt, and black pepper; stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
- Let it cook for about 25-30 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
- Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley.
