Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dill - 1 tablespoon, chopped
  • Parsley - 1 tablespoon, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, ricotta cheese, dill, parsley, black pepper, and salt. Mix well until fully combined.
  5. On a clean surface, lay out 3 sheets of phyllo dough, brushing each layer lightly with olive oil before adding the next. Place the spinach filling along one edge of the dough, forming a log shape.
  6. Roll the phyllo dough over the filling to create a log, tucking in the sides as you roll to seal the filling. Repeat with the remaining phyllo and filling.
  7. Place the spanakopita logs on a lined baking sheet. Brush the tops with the beaten egg to give a golden color during baking.
  8. Bake in the preheated oven for 25-30 minutes, or until the phyllo is crispy and golden brown.
  9. Remove from the oven and let cool for a few minutes before slicing. Serve warm.
