- Phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dill - 1 tablespoon, chopped
- Parsley - 1 tablespoon, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, ricotta cheese, dill, parsley, black pepper, and salt. Mix well until fully combined.
- On a clean surface, lay out 3 sheets of phyllo dough, brushing each layer lightly with olive oil before adding the next. Place the spinach filling along one edge of the dough, forming a log shape.
- Roll the phyllo dough over the filling to create a log, tucking in the sides as you roll to seal the filling. Repeat with the remaining phyllo and filling.
- Place the spanakopita logs on a lined baking sheet. Brush the tops with the beaten egg to give a golden color during baking.
- Bake in the preheated oven for 25-30 minutes, or until the phyllo is crispy and golden brown.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
