Ingredients

  • Cherry tomatoes - 10, whole
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Pita bread - 2 pieces
  • Tzatziki sauce - 100 grams

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  2. Add zucchini, bell pepper, red onion, and cherry tomatoes to the marinade, tossing to coat evenly. Let it marinate for at least 10 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated vegetables onto skewers, alternating between the different types.
  5. Grill the vegetable skewers for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
  6. Warm the pita bread on the grill for about 1-2 minutes on each side.
  7. Serve the grilled vegetable souvlaki with warm pita and tzatziki sauce on the side.
