- Bell pepper (red or yellow) - 1 medium, cut into 2 cm squares
- Red onion - 1 small, cut into wedges
- Cherry tomatoes - 200 grams, whole
- Mushrooms (button or cremini) - 150 grams, cleaned
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon - 1, juiced
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine sliced zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms.
- In a small bowl, whisk together olive oil, dried oregano, garlic powder, salt, black pepper, and lemon juice.
- Pour the marinade over the vegetables and toss until well coated. Let marinate for 10 minutes.
- Thread the marinated vegetables onto the skewers, alternating between different types.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
- Remove from the grill and serve warm.
