Ingredients

  • Zucchini - 1 medium, sliced into 1 cm thick rounds
  • Bell pepper (red or yellow) - 1 medium, cut into 2 cm squares
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 200 grams, whole
  • Mushrooms (button or cremini) - 150 grams, cleaned
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon - 1, juiced
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine sliced zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms.
  3. In a small bowl, whisk together olive oil, dried oregano, garlic powder, salt, black pepper, and lemon juice.
  4. Pour the marinade over the vegetables and toss until well coated. Let marinate for 10 minutes.
  5. Thread the marinated vegetables onto the skewers, alternating between different types.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
  7. Remove from the grill and serve warm.
