- Onion - 100 grams, chopped

- Potatoes - 200 grams, peeled and cubed
- Cherry tomatoes - 150 grams, halved
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 100 grams, crumbled (optional)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the diced eggplant, zucchini, bell pepper, onion, garlic, potatoes, and cherry tomatoes.
- Drizzle the olive oil and lemon juice over the vegetables, then sprinkle with oregano, salt, and black pepper. Toss well to coat evenly.
- Transfer the vegetable mixture to a baking dish, spreading it out in an even layer.
- Cover the dish tightly with aluminum foil to seal in moisture and bake in the preheated oven for 60 minutes.
- After 60 minutes, remove the foil and bake for an additional 15-20 minutes, until the vegetables are tender and slightly caramelized.
- If using, sprinkle crumbled feta cheese over the top during the last 5 minutes of baking.
- Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
