  • Eggplant - 150 grams, diced
  • Zucchini - 150 grams, diced
  • Bell pepper - 100 grams, diced
  • Onion - 100 grams, chopped
  • Garlic - 3 cloves, minced
  • Potatoes - 200 grams, peeled and cubed
  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled (optional)
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the diced eggplant, zucchini, bell pepper, onion, garlic, potatoes, and cherry tomatoes.
  3. Drizzle the olive oil and lemon juice over the vegetables, then sprinkle with oregano, salt, and black pepper. Toss well to coat evenly.
  4. Transfer the vegetable mixture to a baking dish, spreading it out in an even layer.
  5. Cover the dish tightly with aluminum foil to seal in moisture and bake in the preheated oven for 60 minutes.
  6. After 60 minutes, remove the foil and bake for an additional 15-20 minutes, until the vegetables are tender and slightly caramelized.
  7. If using, sprinkle crumbled feta cheese over the top during the last 5 minutes of baking.
  8. Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
