Ingredients

  • Zucchini - 150 grams, grated
  • Carrot - 100 grams, grated
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh dill - 15 grams, chopped
  • All-purpose flour - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, chopped red onion, minced garlic, chopped parsley, and chopped dill.
  2. Add the flour, baking powder, salt, and black pepper to the vegetable mixture and mix well.
  3. Beat the egg in a separate bowl and then add it to the vegetable mixture, stirring until everything is well combined.
  4. Heat a generous amount of olive oil in a frying pan over medium heat.
  5. Scoop small portions of the mixture and shape them into patties.
  6. Carefully place the patties in the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the keftedes from the pan and place them on a paper towel to drain excess oil.
  8. Serve warm with a side of tzatziki sauce or a fresh salad.
