Ingredients
- Zucchini - 150 grams, grated
- Carrot - 100 grams, grated
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh dill - 15 grams, chopped
- All-purpose flour - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1 large
- Olive oil - for frying
Steps
- In a large bowl, combine the grated zucchini, grated carrot, chopped red onion, minced garlic, chopped parsley, and chopped dill.
- Add the flour, baking powder, salt, and black pepper to the vegetable mixture and mix well.
- Beat the egg in a separate bowl and then add it to the vegetable mixture, stirring until everything is well combined.
- Heat a generous amount of olive oil in a frying pan over medium heat.
- Scoop small portions of the mixture and shape them into patties.
- Carefully place the patties in the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the keftedes from the pan and place them on a paper towel to drain excess oil.
- Serve warm with a side of tzatziki sauce or a fresh salad.
