Vegetable Gyro

Ingredients
- 1 medium zucchini - sliced
- 1 medium bell pepper (any color) - sliced
- 1 small red onion - sliced
- 100g cherry tomatoes - halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 whole wheat pita breads
- 50g feta cheese - crumbled
- 1 small cucumber - grated
- 150g Greek yogurt
- 1 tablespoon fresh dill - chopped
- 1 tablespoon lemon juice
- 1 clove garlic - minced
Steps
- Preheat your grill or grill pan over medium heat.
- In a bowl, combine zucchini, bell pepper, red onion, cherry tomatoes, olive oil, oregano, garlic powder, salt, and pepper. Toss until the vegetables are well coated.
- Grill the vegetable mixture for about 10-12 minutes, turning occasionally, until they are tender and slightly charred.
- While the vegetables are grilling, prepare the tzatziki sauce. In a separate bowl, mix the grated cucumber, Greek yogurt, dill, lemon juice, minced garlic, and a pinch of salt. Stir well and set aside.
- Once the vegetables are done, warm the pita breads on the grill for about 1 minute on each side.
- To assemble the gyros, spread a generous amount of tzatziki sauce on each pita, top with the grilled vegetables, and sprinkle with crumbled feta cheese.
- Fold the pita in half and serve immediately.
