  • Arborio rice - 150g
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 large, diced
  • Vegetable broth - 500ml
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot, bell pepper, and zucchini, cooking for an additional 5 minutes until they begin to soften.
  4. Add the diced tomato, Arborio rice, dried oregano, salt, and black pepper, stirring well to combine all ingredients.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  7. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.
  8. Serve warm, garnished with fresh parsley.
