Ingredients

  • Zucchini - 300 grams
  • All-purpose flour - 100 grams
  • Chickpea flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons (for frying)
  • Pasta (whole wheat or gluten-free) - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Lemon juice - 1 tablespoon
  • Black olives - 50 grams, sliced

Steps

  1. Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to draw out excess moisture.
  2. In a mixing bowl, combine the all-purpose flour, chickpea flour, nutritional yeast, dill, parsley, minced garlic, black pepper, and additional salt.
  3. Squeeze the grated zucchini to remove as much moisture as possible and add it to the dry ingredients. Mix until well combined.
  4. Heat 2 tablespoons of olive oil in a skillet over medium heat. Form small fritters from the zucchini mixture and fry for about 4-5 minutes on each side until golden brown. Repeat until all batter is used, adding more oil if necessary.
  5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  6. In the same skillet used for the fritters, add the cherry tomatoes and sauté for 3-4 minutes until softened. Stir in the cooked pasta and lemon juice, mixing well.
  7. Serve the pasta topped with the zucchini fritters and garnish with sliced black olives.
