- Zucchini - 300 grams
- All-purpose flour - 100 grams
- Chickpea flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons (for frying)
- Pasta (whole wheat or gluten-free) - 150 grams
- Cherry tomatoes - 200 grams, halved
- Lemon juice - 1 tablespoon
- Black olives - 50 grams, sliced
Steps
- Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to draw out excess moisture.
- In a mixing bowl, combine the all-purpose flour, chickpea flour, nutritional yeast, dill, parsley, minced garlic, black pepper, and additional salt.
- Squeeze the grated zucchini to remove as much moisture as possible and add it to the dry ingredients. Mix until well combined.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Form small fritters from the zucchini mixture and fry for about 4-5 minutes on each side until golden brown. Repeat until all batter is used, adding more oil if necessary.
- Meanwhile, cook the pasta according to package instructions. Drain and set aside.
- In the same skillet used for the fritters, add the cherry tomatoes and sauté for 3-4 minutes until softened. Stir in the cooked pasta and lemon juice, mixing well.
- Serve the pasta topped with the zucchini fritters and garnish with sliced black olives.
