- Zucchini - 1 small, sliced
- Red bell pepper - 1 small, diced
- Cherry tomatoes - 100 grams, halved
- Red onion - 1/2 small, sliced
- Breadcrumbs - 50 grams
- Nutritional yeast - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the grated cucumber, almond yogurt, minced garlic, dill, mint, lemon juice, olive oil, salt, and black pepper. Mix well to create the tzatziki base.
- In a separate bowl, combine the sliced zucchini, diced red bell pepper, halved cherry tomatoes, and sliced red onion. Drizzle with olive oil and season with salt and pepper, tossing to coat.
- Spread the tzatziki mixture evenly in a baking dish.
- Layer the seasoned vegetables on top of the tzatziki mixture.
- Sprinkle the breadcrumbs and nutritional yeast over the top of the vegetables.
