- Nutritional yeast - 2 tablespoons
- Dried dill - 1 teaspoon
- Garlic powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Vegan feta cheese - 50 grams (optional)
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Olive oil (for drizzling) - 1 tablespoon
Steps
- In a small bowl, mix warm water and active dry yeast, let it sit for 5 minutes until foamy.
- In a large bowl, combine all-purpose flour and salt, then add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough for about 5 minutes on a floured surface until smooth, then cover and let it rise in a warm place for 30 minutes.
- Meanwhile, in a large skillet over medium heat, sauté the fresh spinach until wilted. Remove from heat and let cool slightly.
- In a bowl, combine the crumbled tofu, nutritional yeast, dried dill, garlic powder, black pepper, and lemon juice. Mix well.
- Add the sautéed spinach to the tofu mixture and stir until combined. If using, fold in the vegan feta cheese.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, roll it out to fit a baking sheet or pizza stone.
- Spread the spinach and tofu mixture evenly over the pizza base, then top with halved cherry tomatoes and sliced red onion.
- Drizzle with olive oil and bake for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
