Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh spinach - 200 grams
  • Firm tofu - 150 grams, crumbled
  • Nutritional yeast - 2 tablespoons
  • Dried dill - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegan feta cheese - 50 grams (optional)
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Olive oil (for drizzling) - 1 tablespoon

Steps

  1. In a small bowl, mix warm water and active dry yeast, let it sit for 5 minutes until foamy.
  2. In a large bowl, combine all-purpose flour and salt, then add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough for about 5 minutes on a floured surface until smooth, then cover and let it rise in a warm place for 30 minutes.
  4. Meanwhile, in a large skillet over medium heat, sauté the fresh spinach until wilted. Remove from heat and let cool slightly.
  5. In a bowl, combine the crumbled tofu, nutritional yeast, dried dill, garlic powder, black pepper, and lemon juice. Mix well.
  6. Add the sautéed spinach to the tofu mixture and stir until combined. If using, fold in the vegan feta cheese.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, roll it out to fit a baking sheet or pizza stone.
  9. Spread the spinach and tofu mixture evenly over the pizza base, then top with halved cherry tomatoes and sliced red onion.
  10. Drizzle with olive oil and bake for 15-20 minutes, or until the crust is golden brown.
  11. Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
