Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Dairy-free feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the cooked spinach mixture, crumbled dairy-free feta, chopped dill, lemon juice, salt, and black pepper. Mix well.
  5. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with a third sheet.
  6. Cut the layered phyllo dough into rectangles (approximately 10x15 cm).
  7. Place a spoonful of the spinach filling at one end of each rectangle. Fold the sides over the filling and roll up tightly to form a bite-sized parcel.
  8. Place the filled phyllo bites on a baking sheet lined with parchment paper. Brush the tops with olive oil.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
