Ingredients
- Phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Dairy-free feta cheese - 100 grams, crumbled
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked spinach mixture, crumbled dairy-free feta, chopped dill, lemon juice, salt, and black pepper. Mix well.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again. Repeat with a third sheet.
- Cut the layered phyllo dough into rectangles (approximately 10x15 cm).
- Place a spoonful of the spinach filling at one end of each rectangle. Fold the sides over the filling and roll up tightly to form a bite-sized parcel.
- Place the filled phyllo bites on a baking sheet lined with parchment paper. Brush the tops with olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
