- Phyllo dough - 6 sheets
- Fresh spinach - 200 grams, chopped
- Firm tofu - 150 grams, crumbled
- Green onions - 2, finely chopped
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the chopped spinach, crumbled tofu, green onions, dill, parsley, nutritional yeast, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat this process for a total of three layers.
- Spoon half of the spinach mixture along one long edge of the layered phyllo dough, leaving a little space at the edges. Fold the edges over the filling and carefully roll the phyllo into a log shape to encase the filling.
- Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the top with olive oil.
- Repeat the process with the remaining phyllo sheets and filling to create a second spanakopita.
- Bake in the preheated oven for 25-30 minutes, or until the phyllo is golden brown and crispy.
- Remove from the oven and let cool for a few minutes before slicing and serving.
