Ingredients

  • Phyllo dough - 6 sheets
  • Fresh spinach - 200 grams, chopped
  • Firm tofu - 150 grams, crumbled
  • Green onions - 2, finely chopped
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the chopped spinach, crumbled tofu, green onions, dill, parsley, nutritional yeast, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat this process for a total of three layers.
  4. Spoon half of the spinach mixture along one long edge of the layered phyllo dough, leaving a little space at the edges. Fold the edges over the filling and carefully roll the phyllo into a log shape to encase the filling.
  5. Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the top with olive oil.
  6. Repeat the process with the remaining phyllo sheets and filling to create a second spanakopita.
  7. Bake in the preheated oven for 25-30 minutes, or until the phyllo is golden brown and crispy.
  8. Remove from the oven and let cool for a few minutes before slicing and serving.
