- Kalamata olives - 50 grams, pitted and sliced
- Spinach - 100 grams, fresh
- Vegan feta cheese - 100 grams, crumbled
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the spaghetti cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
