  • Kalamata olives - 50 grams, pitted and sliced
  • Spinach - 100 grams, fresh
  • Vegan feta cheese - 100 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the spaghetti cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
