  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons (for tahini sauce)

Steps

  1. In a mixing bowl, combine the diced red bell pepper, zucchini, and sliced red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
