Ingredients

  • Firm tofu - 300 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 pieces (soaked in water for 30 minutes)

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
  2. Chop the red bell pepper, zucchini, and red onion into 2 cm pieces.
  3. In a bowl, whisk together olive oil, lemon juice, garlic powder, dried oregano, salt, and black pepper to create the marinade.
  4. Add the cubed tofu and chopped vegetables to the marinade, ensuring everything is well coated. Let it marinate for at least 10 minutes.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated tofu and vegetables onto the soaked skewers, alternating between tofu and veggies.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and the tofu is golden.
