- Red bell pepper - 1 medium, sliced
- Zucchini - 1 small, sliced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tahini - 3 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- In a large bowl, toss the cherry tomatoes, red onion, red bell pepper, and zucchini with olive oil, dried oregano, salt, and black pepper.
- Spread the vegetable mixture evenly over the pizza dough.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
- While the pizza is baking, prepare the tahini sauce by mixing tahini, lemon juice, minced garlic, and a pinch of salt in a small bowl. Add water as needed to achieve a drizzle-able consistency.
- Once the pizza is done, remove it from the oven and drizzle the tahini sauce over the top.
- Garnish with fresh parsley before slicing and serving.
