Ingredients

  • Firm tofu - 250 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell pepper - 1 medium, cut into chunks
  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 200 grams
  • Whole wheat pita bread - 2 pieces
  • Cucumber - 1/2, diced
  • Almond yogurt - 100 grams
  • Fresh dill - 1 tablespoon, chopped
  • Garlic - 1 clove, minced

Steps

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a mixing bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper.
  3. Add the tofu cubes to the marinade, toss to coat, and let it sit for at least 15 minutes.
  4. While the tofu marinates, prepare the vegetables by cutting the bell pepper, red onion, and cherry tomatoes.
  5. After marinating, thread the tofu and vegetables onto skewers, alternating between tofu and veggies.
  6. Preheat a grill or grill pan over medium-high heat and lightly oil the grate.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
  8. Meanwhile, prepare the tzatziki by combining almond yogurt, diced cucumber, minced garlic, and fresh dill in a small bowl. Mix well and season with salt to taste.
  9. Warm the pita bread on the grill for 1-2 minutes, then remove from heat.
  10. Serve the grilled souvlaki with warm pita and a generous dollop of tzatziki.
