Ingredients

  • Vegan shrimp - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 150 grams
  • Red onion - 1 small, cut into wedges
  • Bell pepper - 1 small, cut into chunks
  • Pita bread - 2 pieces
  • Fresh parsley - 2 tablespoons, chopped
  • Cucumber - 1/2, diced
  • Dairy-free yogurt - 100 grams
  • Dill - 1 tablespoon, chopped

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  2. Add the vegan shrimp to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated vegan shrimp, cherry tomatoes, red onion wedges, and bell pepper chunks onto skewers.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the vegetables are tender and the shrimp are heated through.
  6. While the skewers are grilling, prepare the tzatziki sauce by mixing dairy-free yogurt, diced cucumber, dill, and a pinch of salt in a small bowl.
  7. Once the skewers are done, remove them from the grill and serve with warm pita bread, tzatziki sauce, and a sprinkle of fresh parsley.
