- Spaghetti - 200 grams
- King oyster mushrooms - 150 grams, sliced
- Nori sheets - 2, cut into strips
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced king oyster mushrooms to the skillet and cook for about 5-7 minutes, until they are golden brown.
- Stir in the cherry tomatoes, nori strips, lemon juice, dried oregano, salt, and black pepper. Cook for another 3-5 minutes until the tomatoes soften.
- Add the cooked spaghetti to the skillet and toss everything together until well combined and heated through.
- Remove from heat and stir in the chopped parsley and red pepper flakes if using.
- Serve warm, garnished with additional parsley if desired.
