Ingredients

  • Spaghetti - 200 grams
  • King oyster mushrooms - 150 grams, sliced
  • Nori sheets - 2, cut into strips
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced king oyster mushrooms to the skillet and cook for about 5-7 minutes, until they are golden brown.
  4. Stir in the cherry tomatoes, nori strips, lemon juice, dried oregano, salt, and black pepper. Cook for another 3-5 minutes until the tomatoes soften.
  5. Add the cooked spaghetti to the skillet and toss everything together until well combined and heated through.
  6. Remove from heat and stir in the chopped parsley and red pepper flakes if using.
  7. Serve warm, garnished with additional parsley if desired.
