- Vegan feta cheese - 150 grams, crumbled
- Garlic - 2 cloves, minced
- Cherry tomatoes - 250 grams, halved
- Red bell pepper - 1, diced
- Spinach - 100 grams, fresh
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and cherry tomatoes to the skillet. Cook for 5-7 minutes until the tomatoes soften and release their juices.
- Stir in the fresh spinach, oregano, salt, and black pepper. Cook until the spinach wilts, about 2-3 minutes.
- Add the cooked pasta to the skillet and toss to combine with the vegetable mixture.
- Carefully fold in the crumbled vegan feta cheese, allowing it to warm through and mix with the pasta.
- Serve hot, garnished with chopped fresh parsley.
