Ingredients

  • Vegan feta cheese - 150 grams, crumbled
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 250 grams, halved
  • Red bell pepper - 1, diced
  • Spinach - 100 grams, fresh
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and cherry tomatoes to the skillet. Cook for 5-7 minutes until the tomatoes soften and release their juices.
  4. Stir in the fresh spinach, oregano, salt, and black pepper. Cook until the spinach wilts, about 2-3 minutes.
  5. Add the cooked pasta to the skillet and toss to combine with the vegetable mixture.
  6. Carefully fold in the crumbled vegan feta cheese, allowing it to warm through and mix with the pasta.
  7. Serve hot, garnished with chopped fresh parsley.
