- Olive oil - 3 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the diced zucchini, bell pepper, eggplant, cherry tomatoes, and sliced red onion.
- Add minced garlic, olive oil, dried oregano, salt, and black pepper to the bowl. Toss the vegetables until evenly coated.
