  • Eggplant - 1 small, diced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, bell pepper, eggplant, cherry tomatoes, and sliced red onion.
  3. Add minced garlic, olive oil, dried oregano, salt, and black pepper to the bowl. Toss the vegetables until evenly coated.
