Ingredients
- Dried chickpeas - 200 grams
- Whole wheat pasta - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 300 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Bay leaf - 1
Steps
- Soak the dried chickpeas in water overnight or for at least 8 hours.
- Drain and rinse the chickpeas, then place them in a pot with fresh water and bring to a boil. Simmer for about 1 hour or until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the canned diced tomatoes, vegetable broth, salt, black pepper, paprika, and bay leaf. Bring the mixture to a simmer.
- Add the cooked chickpeas to the skillet, cover, and let it simmer for 20 minutes to allow the flavors to meld.
- Meanwhile, cook the whole wheat pasta in a separate pot according to package instructions until al dente. Drain and set aside.
- Remove the bay leaf from the chickpea mixture, then combine it with the cooked pasta. Stir in the chopped parsley.
- Serve warm, garnished with additional parsley if desired.
