Ingredients

  • Whole wheat pita bread - 2 pieces
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Cucumber - 100 grams, diced
  • Black olives - 50 grams, pitted and sliced
  • Vegan feta cheese - 100 grams, crumbled
  • Fresh oregano - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the pita breads on a baking sheet and brush each with 1 tablespoon of olive oil.
  3. Bake the pita breads in the preheated oven for about 5 minutes, until they start to crisp up.
  4. While the pita is baking, prepare the toppings by mixing together the cherry tomatoes, red onion, cucumber, black olives, vegan feta, fresh oregano, salt, black pepper, and lemon juice in a bowl.
  5. Remove the pita from the oven and evenly distribute the topping mixture over each pita.
  6. Return the topped pitas to the oven and bake for an additional 10 minutes, until the vegetables are slightly softened and the vegan feta is warm.
  7. Remove from the oven, let cool for a few minutes, then slice and serve warm.
