- Whole wheat pita bread - 2 pieces
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Red onion - 50 grams, thinly sliced
- Cucumber - 100 grams, diced
- Black olives - 50 grams, pitted and sliced
- Vegan feta cheese - 100 grams, crumbled
- Fresh oregano - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Place the pita breads on a baking sheet and brush each with 1 tablespoon of olive oil.
- Bake the pita breads in the preheated oven for about 5 minutes, until they start to crisp up.
- While the pita is baking, prepare the toppings by mixing together the cherry tomatoes, red onion, cucumber, black olives, vegan feta, fresh oregano, salt, black pepper, and lemon juice in a bowl.
- Remove the pita from the oven and evenly distribute the topping mixture over each pita.
