  • Orzo pasta - 150 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4, finely chopped
  • Bell pepper (red or yellow) - 1, diced
  • Kalamata olives - 50 grams, pitted and sliced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a large pot, bring salted water to a boil and cook the orzo pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
