  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Eggplant - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato passata - 200 milliliters
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 3 tablespoons
  • Almond milk - 150 milliliters
  • All-purpose flour - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray lined with parchment paper.
  3. In a bowl, toss the sliced eggplant, zucchini, bell pepper, and red onion with 1 tablespoon of olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast for 15 minutes until tender.
  4. While the vegetables roast, prepare the tomato sauce by heating the remaining olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the tomato passata, add dried oregano, and simmer for 5-7 minutes, stirring occasionally.
  6. In a separate saucepan, whisk together the almond milk, flour, nutritional yeast, and lemon juice over medium heat until thickened, about 3-4 minutes. Remove from heat.
  7. Spread the tomato sauce evenly over the pizza dough, then layer the roasted vegetables on top.
  8. Drizzle the vegan béchamel sauce over the vegetables.
  9. Bake the pizza in the preheated oven for 15-20 minutes until the crust is golden and crispy.
  10. Remove from the oven, let it cool for a few minutes, slice, and serve warm.
