- Pizza dough - 250 grams

- Eggplant - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato passata - 200 milliliters
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 3 tablespoons
- Almond milk - 150 milliliters
- All-purpose flour - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray lined with parchment paper.
- In a bowl, toss the sliced eggplant, zucchini, bell pepper, and red onion with 1 tablespoon of olive oil, salt, and pepper. Spread the vegetables on a baking sheet and roast for 15 minutes until tender.
- While the vegetables roast, prepare the tomato sauce by heating the remaining olive oil in a saucepan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the tomato passata, add dried oregano, and simmer for 5-7 minutes, stirring occasionally.
- In a separate saucepan, whisk together the almond milk, flour, nutritional yeast, and lemon juice over medium heat until thickened, about 3-4 minutes. Remove from heat.
- Spread the tomato sauce evenly over the pizza dough, then layer the roasted vegetables on top.
- Drizzle the vegan béchamel sauce over the vegetables.
- Bake the pizza in the preheated oven for 15-20 minutes until the crust is golden and crispy.
- Remove from the oven, let it cool for a few minutes, slice, and serve warm.
