  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the shredded cabbage, halved cherry tomatoes, sliced red onion, and chopped parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
