- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the shredded cabbage, halved cherry tomatoes, sliced red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
